Wood ear mushroom, named for its distinctive ear-like, gelatinous shape growing on decaying wood, has been cultivated and used across Chinese cuisine and traditional medicine for centuries, traditionally applied for respiratory ailments, digestive imbalances, and inflammation. China remains by far the largest producer of cultivated mushrooms globally.
Wood ear's modern research interest has focused on its rich polysaccharide content and unusually high fiber viscosity, with a small number of real human trials beginning to emerge from Korean research groups specifically.
Wood ear mushroom has some genuine human trial evidence, a modest step beyond the purely preclinical picture common among lesser-studied mushrooms in this Atlas. Korean researchers have conducted a prospective, randomized, open-label, controlled trial examining functional foods containing Auricularia powder in middle-aged adults, and a separate Korean study examined effects on blood lipid profile and bone density in middle-aged abdominal-obese women — real human research, though using an open-label design, a meaningfully weaker methodology than double-blind placebo-controlled trials.
The great majority of wood ear's evidence base remains explicitly preclinical. Independent reviewers state findings on metabolic syndrome "suggest potential" but that "human clinical trials remain limited." Given real but methodologically modest human trials, layered on top of extensive preclinical research, "Limited" is the accurate rating.
