The vegetable science finally explained

Beetroot descends from wild sea beet, a plant native to Mediterranean coastlines, and was originally cultivated by the ancient Greeks and Romans primarily for its leaves rather than its root — the root itself wasn't widely eaten until later in European history. Roman texts documented beetroot's use as a food and folk remedy, and it gradually spread across Europe through medieval times, becoming a staple root vegetable in Eastern European and Russian cuisine in particular, most famously as the base of borscht.

Beetroot's modern research reputation is a genuinely interesting case of old-fashioned food science catching up to a mechanism nobody understood historically: its high natural nitrate content, only chemically identified and studied for cardiovascular effects in the 21st century, turns out to explain much of its traditional reputation as a vitality-boosting food — a rare case where the "why" behind a folk food arrived roughly two thousand years after the food itself.

A systematic review and meta-analysis found beetroot juice supplementation significantly reduced both systolic blood pressure (by an average of 5.33 mmHg) and diastolic blood pressure (3.01 mmHg) compared to placebo, with very low heterogeneity between studies — a sign of unusually consistent results across independent trials. Separately, multiple meta-analyses on exercise performance found beetroot juice significantly improved exercise capacity, with an International Olympic Committee consensus statement now supporting nitrate-rich foods like beetroot for endurance and high-intensity exercise performance specifically.

The scientific mechanism is well understood: beetroot's high dietary nitrate content converts in the body to nitric oxide, which relaxes blood vessels and improves oxygen efficiency during exercise. Researchers note that whole beetroot juice outperforms isolated nitrate salts in trials, suggesting other plant compounds (polyphenols, vitamin C) meaningfully assist the effect — a good example of a whole food potentially working better than an isolated "active ingredient" alone. The consistency across multiple independent meta-analyses for two distinct outcomes is what earns beetroot a "Moderate-Strong" rating.
