Mustard's most popular modern health claim — that it boosts metabolism and burns calories — has actually been directly and formally tested in humans, with a clear negative result. A controlled human study measuring energy expenditure, body temperature, and metabolic markers found "the highest tolerable dose of mustard we were able to use did not elicit a relevant thermogenic response in humans," with no meaningful differences in energy expenditure, substrate oxidation, or hunger sensation.

Mustard's most genuinely established human research application is actually indirect: mustard seed powder contains myrosinase, and real randomized trials have found that adding mustard seed powder to broccoli significantly increases absorption of broccoli's beneficial sulforaphane compound — though this reflects a benefit to broccoli's compound, not mustard's own health effect. A comprehensive 2025 review states plainly that "human studies are limited" for mustard's broader claims. Given a real formal negative trial for its most popular claim, "Limited" is the accurate rating.
